The Great Oat Cake Experiment.

WOW!

Have I been gone a long time or what? It’s been insane finishing up my masters, trying to spend time with people, stay in shape, eat all the food in my cupboard, etc. Blogging fell by the wayside, but reading other blogs definitely provided wonderful study breaks.

Speaking of study breaks and cleaning out the cupboard… I found myself staring at an enormous jug of Quaker Oats. I remembered a little thing called “Oat Cakes” I wanted to try baking, I found this recipe, some friends, and tried my hand at them!

Let me present to you:

The Great Oat Cake Experiment!

We made two batches… each batch required 3 c ground oats. Yes, I had OVER 6 cups of oatmeal lying around.

This is chaos that ensued from the wet ingredients: honey, greek yogurt, sugar, and vanilla.

The figs and apricots for the first batch- we chopped them up as finely as possible.

Then we added the fruit to the wet ingredients (this is batch 2- cranberry!) with egg whites.

Add some flour to the ground oats, add the wet ingredients, and mush like heck!

Shape them into hockey pucks, throw ’em in the oven, and hope they turn out.

The First Batch

Apricot-Fig (followed recipe to a ‘T’ except more than 1/2 c. fruit)

Verdict: Looked sub-par, tasted DELICIOUS

Second Batch (Alterations: Added more yogurt and an additional egg white and more than 1/2 c fruit. Ran out of honey, so used up what we could and splashed in some extra sugar)

Verdict: Absolutely delicious!!!! We loved the cranberry taste in almost every bite.

Delicious. Remember: eat with your hands- it’s the Cali way 🙂 These keep you full forever!

Adaptions I want to try:

  • Using Whole-Wheat Flour
  • Adding Apple Sauce
  • Using Peanut Butter (duh!)

All in all this experiment was a huge success. We made 24 and I ended up only getting to eat one! All of our friends clamored from them and adored them. My skeptical boyfriend tried one and is now begging me to make more!

Here is the recipe, reposted from here:

Ingredients

  • 3 c Rolled oats
  • 2 c Flour
  • 1/4 ts Baking powder
  • 1/3 c Plain fat-free yogurt (I used Fage 0%)
  • 1/2 c Crystalline fructose (I used sugar)
  • 1/2 c Honey
  • 1/2 ts Vanilla
  • 1 Egg white
  • 1/2 c Dried fruit (I always did much more than this!)

Instructions

Thoroughly grind rolled oats in food processor or blender.

Mix with flour and baking powder.

Chop dried fruit into small pieces.

In a separate bowl, “cream” together yogurt, fructose, honey, and vanilla.

In yet another bowl, lightly beat egg white until it gets bubbly but not stiff.

Fold egg white into the wet ingredients. Add dried fruit.

Combine wet and dry ingredients. The dough gets pretty stiff and is hard to mix. You may even have to knead it with your hands like bread dough!

Form into 12 patties (We usually only got 10-11)

Bake at 325 degrees F for 15 minutes on non-stick cookie sheet. Cool completely and store in refrigerator. These keep well and may be frozen.

Per patty: 250 calories, 1.5 g fat. (Allegedly)

Well, it’s officially finals time here at Stanford- whoop whoop. So it’s miraculous I’m posting at all. That’s just how much I love you guys.

So- in my study snacking I have found two things that I absolutely adore:

Goat cheese is okay for people who are lactards! YAY! I can feel so decadent and my belly doesn’t say “No NO NO!” Glorious.

Alright back to the books (er… actually going to go on a hike…).

No worries— I have consumed a lot of Peanut Butter in the past week. A. LOT. Like… a whole jar of this. Which was awesome expensive delish 🙂 Gotta fuel that brain!

Question: Anyone do Bikram? How many times a week do you do it? I’m usually “yoga-ed out” for a day or two after an intense session.

Detox Days 2-4

Detox Days 2-3 were good in that:

  • I had no milk
  • I had no caffeine
  • I had no coffee

I started with a Green Meanie… that was disgusting. I think I put in WAY too much kale. I had to add some Stevia and a bajillion strawberries until it was palatable, but even then I dumped some out. I am not a fan of bitter foods!

Since that was a quasi-disaster, I finished breakfast with 1 egg + 2 egg whites for protein. Later in the day I had this fabulous snackaroo:

It always settles my stomach really well and satiates me divinely. I find that one piece, while small and relatively calorie dense, really hits the spot.  I usually eat it plain and toasted well- that’s how delicious it is!

Today I realized:

  • How great I feel when I eat well
  • How tough it can be to avoid foods that make me feel like dirt
  • How resting is sometimes the perfect medicine

I am exhausted today so it’s my day “off” of exercise.  I meant to do Yoga but I got a call from my boy who just landed in INDIA!!!! He was a million times more important than yoga!! It made my day to talk to him.

I am going to go try to get a little resistance training in– squats, lunges, abs… but we’ll see… I’m pretty lethargic!

Hello Reader McReaders,

A while ago I posted about snacks that I love- they fill me up, are easy to take with me, and are full of wonderful ingredients. The wonderful people over at California Suncakes sent me the most amazing package.

So many samples! Each one contains 30% of daily protein, 40% of fiber, and 50% of daily calcium.

There are two “types” – The suncake-

Both Suncakes and HeartThrives come in a variety of flavors, including Raisin Spice, Chocolate, Apricot, Cranberry, Apple, and Lemon Poppyseed. They stay good for a month, but, and I can attest to this, keep well in the freezer and delicious when reheated.

Now- ingredients:

For the Apricot-

Oats, Apricots, Brown Rice Syrup, Brown Rice Flour, Soy Protein Concentrate, Soy Flour, Rice Bran, Natural Fruit Juice, Dried Plums, Orange Peel, Almond Extract.

I CAN PRONOUNCE THOSE WORDS!!!!!!!!!

But here is the most important thing yet:

  1. They are delicious– each flavor is unique but equally delicious- Cranberry is my favorite
  2. They are portable- I have a Heart Thrive as a snack or a Suncake for a quick on-the-go breakfast– they fit in my backpack and don’t get all smushed
  3. They are filling– I eat one and feel perfectly satiated until my next meal or snack. The first time it happened I thought it might be a fluke. But EVERYTIME I eat one I feel the same way.
  4. I brought some when I visited my sister in Seattle (and we are known to have different tastes) and she loved it!

Detox Day 1

Hello there my long-lost loves!

Today began the DETOX! And by “detox” I mean “try to eat healthy” 🙂

I started my day with this gem:

A green meany (my boyfriend says it’s not a monster without protein powder-haha!) with tons of spinach, kale, rice milk, water, flax seeds, banana, and some strawberries. YUM!

Then an hour later I snacked on some Koku toast (brown rice bread):

SO DELICIOUS!

During class I had a divine Perfect Foods Fruit and Nut bar (no pic because i was “learning”).

For a late lunch I had this salad:

Just LOOK at that cauliflower!!

I ate all the cauliflower and half the salmon before I felt really sick to my stomach 😦 I lay down for a while and packed for my trip. About two hours later I felt good enough for another piece of Koku toast and this delight:

Zoe’s Cranberry granola with rice milk. The toast and granola went down alright, but I made sure to eat slowly.

Now I’m off to the airport for an all-weekend conference! I probably (okay definitely won’t) be able to take pics of my food, but I’ll keep a tally of what I’m eating and not eating.

I am a huge fan of healthy fats, lots of protein, vitamins, and ingredient lists that I can read. Perfect Foods bars fulfill all of these, and I truly believe they are perfect. Many meal replacement bars leave me hungry soon afterwards.  After eating one of these bars, not only am I satiated for a long time, but I feel good about what I have eaten.  I know that I have put healthy, whole foods in my body.  I have given it carbs, protein, and fat in one tasty bar.  Each bar has approximately 283 calories, 15 grams of fat (2 g saturated 13 g polyunsaturated), 3 mg Cholesterol, 95 mg Sodium, 520 mg Potassium, 26 g Carbs, 4 g Figer, 16 g Sugars, and 18 g Protein. The bars have 25% Vitamin A, 100% Vitamin C, 35% Calcium, 40% Iron, 100% Vitamin E, 25% Thiamin, 15% Riboflavin, 20% Niacin, 25% Vitamin B6, 25%Folate, 25% Vitamin B12, 30% Biotin, 20% Pantothenic Acid, 30% Phosphorus, 25% Magnesium, 30% Zinc, 25% Copper, 25% Manganese, and 20% Chromium. WOW!

Now you are probably asking yourself, “What weird things are in these bars?” In the Fruit and Nut bars (which are gluten free!) the ingredients are: Peanut Butter, Raw unheated buddy bee honey, milk protein, eg protein, raisins, walnuts, rice protien, dried whole food powders (sunflower seed, sesame seed, flax seed, rice bran, rose-hip, orange, lemon, grapefruit, tomato, apple, bell pepper, papaya, mango, black cherry, cranberry, fig, alfalfa, celery, spinach, parsley, mink, kelp, dulse), olive oil, sunflower seed oil, sesame seed oil, flax seed oil, pumpkin seed oil, almond oil, and rice bran oil. HOLY AMAZING! Many of these ingredients are organic, also!

The texture of these bars are thick and they crumble deliciously in your mouth. The taste of peanut butter and honey are strong in the Fruit and Nut bar, with a few raisins throughout the bar– so wonderful.

While my day was made by having this amazing on-the-go breakfast (also can be lunch or post-workout snack or ANYTHING!)- I know many of you have not been able to try these delicious and nutricious bars.
